PAPWORTH Hospital has launched its very own cookery book featuring recipes from a host of celebrities.

World renowned surgeon, Professor John Wallwork, has persuaded hospital staff and celebrities, including Sir Terry Wogan, Stephen Fry, Esther Rantzen, Gordon Ramsay, Ainsley Harriott and pop star Antony Costa to contribute recipes to the book.

Prof Wallwork's own contribution to the book, which will raise funds for the hospital, is mussel soup chowder made with wine and double cream.

He told The Hunts Post: "I started cooking at university (Edinburgh) because the food was terrible. I thought of the cookery book idea because I love cooking.

"I usually cook at home at weekends and when we have dinner parties."

Among his tips are to mix raw fresh salmon and smoked salmon for a starter, chopping up the fish with shallots, avocado and lime juice and lightly dressing it with oil.

Another is to make pork chops tender by buying them as a rack and roasting them in the oven.

The book includes some 40 recipes including light bites, fish dishes, vegetarian main meals and desserts.

Stephen Fry's recipe is for honey buns made with eggs, caster sugar, brown sugar, flour, butter and honey, which "his people" say he cooks a lot. Gordon Ramsay provides a recipe for curried lentil and spinach soup.

There is a scallop, avocado and bacon salad from Sir Terry Wogan, including a dressing, actor Kenneth Branagh is in the vegetarian section with a spicy bean curd salad and EastEnders' Wendy Richard offers a cheese cake.

One of the most yummy desserts is from Janet Starling, a hospital volunteer. For Bishop's Velvet, she combines whipping or double cream, natural yoghurt, tinned sliced peaches and demerara sugar. The peaches are drained, the cream is whisked, the yoghurt is poured and the sugar is sprinkled over the mixture. Place in the fridge overnight - and try terribly hard not to eat it until the guests arrive.
